Low carb protein banana bread

Hi all. So sorry i haven't been posting lately. I kinda forgot about it. I have been meaning to post this recipe for awhile now and happen to be making it so what better time to post it. This banana bread is AMAZING and so most and healthy! SCORE! It's great for snacks. 


I am currently training for a half marathon, May 8th, 2011 in Fredericton, New Brunswick. I am really amped up training wise and have been doing great so far. I am not too far into my training yet as it's still awhile away. I have also signed up for the 3 Mountain Relay again this year but it is after the half and is in June. By far one of the funnest races of the race season! 


Training in the winter can be really tough and dangerous. Especially with all the snow we are getting this year. It's slippery, slushy and uses a lot of muscles that you don't use while running on pavement or even a gravel trail. You also risk cars not seeing you and almost hitting you, but that is a danger runners experience year round. That's why i like to stick to trails as much as i can. My good friend Edgar Vick suggested the trail in the north/west end of Moncton. So i plan on hitting that up this weekend maybe for my 10k run. It's really well groomed and safe. Gotta love that!


So here is the recipe:




Preheat oven 325 degrees F, PAM a large loaf pan
Bowl 1, mix:
3 egg whites
3 ripe bananas
1/2 cup organic sugar or stevia
1/2 cup slivered almonds (i don't put them in b/c i don't like nuts in my banana bread for some reason)
1/2 cup unsweetened applesauce
Bowl 2, mix:
2 scoops whey protein (I used Genuine Health vegan proteins+ vanilla flavored. Plain works well too)
2 cups almond flour
1-2 tbsp cinnamon
1 tsp baking soda
1/2 tsp baking powder
1 tsp sea salt to preserve the banana bread, don't skimp on this. Sea salt also has a lot of trace minerals that our bodies need.
Combine all, mix well and pour into loaf pan, bake 60 minutes or until fork comes out clean (I cooked it for 45 and should have cooked it for 40 i think)
